2006 Seafood Watch recommends farmed Tilapia as a Best Choice fish
1 second spray canola cooking spray
2 quarts cherry tomatoes, halved
2 Tablespoons chopped fresh thyme
1 teaspoon kosher salt
1 teaspoon black pepper
2 Tablespoons minced fresh garlic
2 1/2 pounds farmed Tilapia fillets
8 - 5oz portions
1/2 cup fresh lemon juice
Preheat oven to 400 degrees.
In a large bowl, combine cherry tomatoes, thyme, salt, pepper and garlic. Toss to combine and coat tomatoes evenly with all seasonings.
Transfer tomatoes to 9x11 baking dish sprayed with cooking spray. Place in oven and roast for about 15 minutes so tomatoes begin to burst.
Add Tilapia fillets to pan and roast for another 8 minutes or until Tilapia is barely cooked through.
Remove pan from oven and drizzle lemon juice over the fish.
