This recipe is my version of the popular McDonald’s salad – it is delicious and simple to make at home.
1 16 ounce package mixed baby greens salad mix
2 chicken breasts, boneless and skinless; grilled and sliced into pieces (can be served hot or cold)
1 11 ounce can mandarin oranges, drained
3/4 cup edamame, shelled (and thawed, if previously frozen); microwaved on high for 2 minutes
1/4 pound snow peas, sliced diagonally into pieces
1 red pepper, chopped
1/2 cup carrot, shaved
1/4 cup almonds, sliced
Newman’s Own Low Fat Sesame Ginger Salad Dressing
Divide ingredients into two large salad bowls or plates in the order listed above. Season to taste, if desired.
